Description: This is a fantastic rub for your favorite steak or roast. Completely salt-free (of course you can add your own salt if you like). The pungent flavor is a result of the combination of Szechuan peppercorns, ginger, sumac berries and chipotle peppers. Rub into steaks, sprinkle over roasts, or add to burger patties. To marinate, combine with olive oil, and a dash of red wine. After marinating, slow cook or smoke your cut of meat. Ingredients: chipotle, brown mustard seeds, Szechuan peppercorns, ginger, orange, molasses, sumac berries, horseradish As A Rub: Rub a generous amount into your steak or roast. Let marinate for a few hours at room temperature before broiling or barbecuing. Wet Marinade: 1/3 cup Soy Sauce and 1 tbsp Sesame oil, or ¼ cup Red wine with ¼ cup V-8, 1 tbsp of rub per 4 servings of meat (more rub is OK if you prefer a stronger taste). Marinade for 6-12 hrs. Tomato Marinade: Use 2 parts Worcestershire Sauce and 3 parts Tomato Sauce with 2 parts rub to produce a paste.
