Description: Size 8 Ounces (Photo depicts the whole form of cheese). Made from unpasteurized cow's milk. Aged over nine months. While it was originally produced in the south of Italy, provolone is a now widely produced in northern Italy. Its relationship to mozzarella is well established. Provolone is actually aged mozzarella. The mozzarella is rubbed with brine, bound with rope and hung for a few months to sharpen and age. There are two varieties of Provolone. Dolce (meaning sweet) is the mild version and piccante (meaning sharp). We offer you this piccante version, which is rarely available in the U.S .and much more interesting than the mild, bland provolone, usually sold from the deli case, that most Americans have come to know. One of the great sandwich and salad cheeses, provolone piccante is also an excellent melting cheese that is perfect in omelettes or atop a toasted baguette.
