Description: Speck is a type of smoked and cured ham from the South Tyrol region of Italy. Historical evidence shows that speck production goes back to the 13th century. Our selection is made by Recla, a well respected producer since 1919. The hind leg of the pig is rubbed with a mix of spices that is a well kept family secret. Basically it is a mix of rock salt, sea salt, pickling salt, pepper, juniper berries, various herbs and a hint of allspice. Two weeks of dry curing is the first stage in preserving the meat. The speck is then lightly cold-smoked over beech wood chips for about two to three hours a day for a week. This produces its signature flavor. The individual pieces of speck are then stacked carefully for maturing in aging cellars for about five months, where the product loses about 40% of its weight in the slow drying process. This maturing process is important for the ham to become truly tender.Serve this delicious ham, thinly sliced, as you would any fine quality ham. Size 1.5 pound
