RAO's, the famous New York restaurant, has created a line of homemade products based on their traditional Southern Italian cuisine. A recent addition, and one of our favorites, is the Roasted Peppers with golden raisins and pine nuts. This is one of those very "simple" dishes that generally requires not too much work, but a good deal of patience and time. Unfortunately, both of these are often in short supply. And that's why we love this product.

The peppers are fire roasted, cored, peeled and seeded. Sweet raisins, pine nuts, oil and garlic are added to create a unique product with many delicious uses. It's wonderful used in appetizer and antipasto platters especially when paired with cheese. But it also works well in pannini or on toasted bread as a bruschetta topping. We have even added it to cooked dishes such as sauteed chicken or roasted potatoes with excellent results.
